Fast, fresh food that you can do at home
Roast chicken, grocery, some potatoes "cooked" in the microwave - Poke a few holes in potato with a fork and wrap in damp paper towels, microwave a large potato for eight minutes (add a minute or two for each additional potato) - and a bag of salad 'o or frozen vegetables with a little seasoning can come together to make a great dinner in a pinch. For omelettes in the microwave, scramble two eggs per person and season with salt and pepper. Generously spray a deep pie dish with nonstick cooking spray.Pour the eggs (no more than four at a time) and microwave on high for one to two minutes. Without touching the inside of the dish, mix the eggs carefully. Sprinkle the surface evenly with a cup of your choice pre-heated filler such as chopped tomatoes, cooked vegetables, black beans and salsa, minced meat, etc. Top with some of your favorite cheese - grated or grated - and microwave until done, a minute or two. Drag on the plate, bending over when the omelet is half the pie plate. If it is not completely defined, microwave for 30 to 60 seconds.Caprese salad for conventional use mozzarella slices (gourmet cheese section of grocery store), locally grown tomatoes and basil. Layer cheese, tomato slices and basil leaves on a serving platter. Drizzle with extra virgin olive oil and fresh cracked pepper. Coupled with a loaf of fresh baked bread is a meal elegantly decadent yet economical. Make a quick meal with the remains of microwave some potatoes medium / high until done. Heat leftover marinara or meat sauce, vegetables, chili, salsa or whatever you have on hand that you like. Cut the cooked potatoes and top with heated remains of your choice.Sprinkle a little cheese and olive oil and microwave for a few seconds to melt the cheese. Ring the dinner bell. Dessert? Ice cream and watermelon will always be summer favorites. Ask them to "old school" or go a little greedy and add sliced strawberries and a drizzle of balsamic glaze ice cream with vanilla. Organic honey, balsamic glaze and a few bits of goat cheese on slices of watermelon is a decadent dessert but light.
